Shane Nell's
Beef Tenderloin Marinade

1/2 cup Extra Light Olive Oil

1/4 cup Lemon Juice 

1 tbsp Northern Steak Seasoning - Sold in our store

1 tsp Kosher Salt 

1/2 tsp Ground Pepper

1/3 cup Water 

1 tbsp Soy Sauce

1 tbsp Worcestershire Sauce

1 tbsp Mustard 

2 large Garlic Cloves Finely Chopped or Crushed

Mix all of the ingredients together and submerge the tenderloin. 

If using a whole tenderloin, overnight is recommended. If you are using already cut steaks shorten that time to just a few hours. 

To cook: Grill the tenderloin until the middle reaches the desired internal temperature. Cover in foil and let it rest for a few minutes. 

For a whole tenderloin you can grill it whole until it reaches the desired internal temp and cut into steaks after cooking. This will give you a fairly wide variety of color and doneness in your steak.

Beef Flank Steak Marinade

2 Garlic Cloves Finely Chopped or Crushed

1tbsp Soy Sauce

1 tbsp Worcestershire Sauce

Salt & Pepper to taste 

1/4 cup Lemon Juice 

1/2 cup Olive Oil 

1/2 cup Red Wine 

Mix all of the ingredients together and submerge the flank steak overnight or for at least 4 hours. 

To cook: Grill the flank steak for a few minutes on each side until it reaches the desired internal temperature. Cover in foil and let rest for few minutes. 

Slice into thin pieces against the grain and enjoy!

BBQ Brisket

7-8# Trimmed Brisket 

Salt

Pepper

12oz Kaban BBQ Sauce 

(your choice of flavor)

Sprinkle both sides of the brisket with salt and pepper. Place in a large roast pan with the fat side up. Add water to the pan up to the thickest part of the meat.

Cover with a lid or foil and bake at 300 degree for 3 hours.  It should be tender with a little firmness. Remove and let cool.

Once cool remove brisket and put on plate. Cover and put in refrigerator for at least 6 hours or over night.

Once it is completely cool take the brisket out of refrigerator, trim  o the fat, and slice thin. In a foil pan cover bottom with beef broth about ¼ inch, lay sliced brisket in, cover with saran wrap and foil and put in refrigerator or freezer till you are ready to make.

 

TO MAKE Take saran wrap o , put  foil back on, and put in the oven at 200 degrees till warm, about 1-1½ hour take out of oven to drain some broth o . Pour BBQ sauce over brisket and put back in oven uncovered at 200 degree for 15-20 minutes till BBQ sauce caramelizes.

Pineapple 
Ham Loaf Glaze

3/4 cup Brown Sugar

1 cup Pineapple Juice

or 1/2 Crushed pineapple 1/2 juice

2 tbsp Vinegar

1/4 cup Water

2 tbsp Cornstarch

1 1/2 tsp mustard

Add ingredients together in a sauce pan and cook on low until glaze thickens.

Pour over ham loaf and bake as usual.
